Good nutrition plays an essential role in our health. It decreases the risk of developing certain chronic diseases and thus increases life expectancy. This study is first its kind Morocco, objective to determine nutrient composition most consumed Moroccan culinary recipes. Thus, thanks calculation nutriscore, we can know which recipe “healthiest”. Some traditional dishes were collected carbohydrates, fats, proteins analyzed using procedures Association Official Analytical Chemists, then followed by a food exchange lists per serving Wheeler method. Variations macronutrients, micronutrients (minerals trace elements) trans-fatty acid content, polyunsaturated monounsaturated found among dishes. The highest protein (17.37g/100g) Chicken, French Fries, Cumin Tajine while lowest (0.06g/100g) Orange Carrot Salad. carbohydrates (42.68g / 100g) Tuna Pizza (2.37g tomato with pepper. And lipids (19.2g/ 100 g) meat onion (0.6g/ Harira.
